  1. Peel fresh garlic cloves and soak them in ice water for 10 minutes.
  2. Drain the garlic and transfer it to a food processor. Add salt and lemon juice, and pulse until finely minced.
  3. With the processor running, slowly drizzle in the vegetable oil to emulsify and create a creamy texture.
  4. Taste and adjust seasoning if necessary, then transfer to an airtight container and refrigerate for a couple of hours.
