  • 1 tablespoon Italian seasoning
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Black pepper Adjust to taste
  • 4 cups Fresh spinach Can substitute with thawed frozen spinach
  • 8 ounces Cream cheese Full-fat is preferred
  • 1 cup Shredded mozzarella Melts beautifully on top
  • 1/2 cup Optional Parmesan cheese Flavor enhancer, can leave out

Cooking Steps
  1. Preheat your oven to 400°F (200°C) and grease the baking dish with olive oil.

  2. Whisk together olive oil, garlic, Italian seasoning, salt, and pepper. Marinate chicken breasts for 15-30 minutes.

  3. Sauté spinach in a skillet over medium heat with a tablespoon of olive oil for 2-3 minutes until wilted.

  4. Beat cream cheese until smooth, then mix in sautéed spinach and half a cup of shredded mozzarella.

  5. Optionally, sear the marinated chicken in the skillet over high heat for 2-3 minutes on each side.

  6. Arrange chicken in the baking dish and spread the cream cheese mixture on top. Sprinkle remaining mozzarella.

  7. Bake for 20-30 minutes until internal chicken temperature reaches 165°F (75°C) and cheese is bubbly.

Notes
