- Begin by draining and rinsing one can of chickpeas. In a large mixing bowl, mash the chickpeas using a fork or potato masher until chunky but still slightly whole—this should take about 2 minutes.
- Add to the bowl your choice of mayonnaise, Dijon mustard, chopped celery, diced onion, lemon juice, salt, and pepper. Stir the mixture vigorously for about 1-2 minutes until everything is well combined and creamy.
- Take your toasted slices of bread and generously spread the chickpea salad mixture over one side of each slice. If you're a fan of cheese, add a slice or sprinkle shredded cheese on top of the chickpea salad.
- Heat a non-stick skillet over medium heat. Carefully place the assembled sandwiches into the skillet and grill for 3-5 minutes on each side until golden brown and cheese is melted.
- Once both sides are beautifully golden and crispy, remove the Chickpea Salad Melts from the skillet. Cut each sandwich in half and arrange them on a plate. Serve immediately.
