- Preheat your oven to 400°F (200°C) and line a baking pan with parchment paper.
- Trim off the ends of the zucchini and cut a thin slit lengthwise along each zucchini.
- Sprinkle Himalayan salt and freshly ground black pepper into the slits of each zucchini.
- Fill the zucchini with goat cheese, packing it in generously.
- Sprinkle half of the chopped fresh mint into the pockets and drizzle olive oil over the zucchinis.
- Place the filled zucchinis in the prepared baking pan and cover with aluminum foil. Bake for 10 minutes.
- Remove the foil and continue baking uncovered for an additional 20 minutes until tender and lightly browned.
