Method
 

Preparation Instructions

  2. Trim off the ends of the zucchini and cut a thin slit lengthwise along each zucchini.
  3. Sprinkle Himalayan salt and freshly ground black pepper into the slits of each zucchini.
  4. Fill the zucchini with goat cheese, packing it in generously.
  5. Sprinkle half of the chopped fresh mint into the pockets and drizzle olive oil over the zucchinis.
  6. Place the filled zucchinis in the prepared baking pan and cover with aluminum foil. Bake for 10 minutes.
  7. Remove the foil and continue baking uncovered for an additional 20 minutes until tender and lightly browned.
